Baked Apple Cider Donuts with Cinnamon-Sugar Glaze

I purchased a donut pan this fall. It was an impulse buy. I could not help myself, imagining all the delicious, homemade, fresh baked donuts I could enjoy in my future. After posting my first donut recipe, Pumpkin Spice Donuts, I had a friend suggest I try making apple cider donuts.

Immediately upon hearing that idea, I rearranged my “to bake” list, placing apple cider donuts at the top. With the company of my friend Yoora, these apple cider donuts were made, glazed, and quickly devoured. There really is nothing as wonderful as the smell of fresh baked bread in the oven, and nothing as perfectly seasonal as apple cider donuts! Add a little cheer to your day, try something new. Everyone in your family will be soo glad you did.

  • 2 cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 egg (beaten)
  • 2/3 cup packed brown sugar
  • ½ cup unsweetened apple sauce
  • 1/3 cup maple syrup
  • 1/3 cup apple cider
  • 1/3 cup vanilla yogurt
  • 3 Tablespoon vegetable oil

  1. Preheat your oven to 350˚F and carefully grease your donut pan.
  2. In a large bowl, mix together the flour, baking powder, salt, and cinnamon until well combined.
  3. In a medium sized bowl whisk together the egg, brown sugar, apple sauce, maple syrup, apple cider, vanilla yogurt, and vegetable oil.
  4. Add the wet ingredients to the dry ingredients and whisk until well combined.
  5. Fill an icing bag with the donut batter. Cut the tip off of the bag and then fill the donut pan almost full with donut batter. (This is a much quicker method than spooning the batter, however that can work as well).
  6. Bake for 8-12 minutes, or until the donut springs back when touched and is light brown on top.
  7. Allow the donut to cool for 5 minutes and then transfer to a cooling rack. Glaze the donut once completely cooled.

Apple Cinnamon Glaze Ingredients:

  • 1 ½ cups powdered sugar
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ cup apple cider
  • 2 Tablespoons milk

  1. Combine the ingredients in a medium sized bowl and stir well. If the mixture is too dry, add more apple cider. If your icing is too runny for you, add ¼ cup more powdered sugar.
  2. Place the icing in the refrigerator while the donuts cool. I find that slightly refrigerated icing allows for less icing run-off in the end.
  3. Once the donuts are cool, arrange the donuts on a plate. Use a spoon to pour the icing over the donuts, spreading the icing evenly with the back of the spoon when necessary.
  4. Eat and enjoy!
